Les graines sont plac\u00e9es dans des conteneurs alv\u00e9olaires entre la troisi\u00e8me d\u00e9cade de f\u00e9vrier et la deuxi\u00e8me d\u00e9cade de mars.<br>Une fois que les plantules ont d\u00e9velopp\u00e9 4\/5 feuilles, elles sont transplant\u00e9es en plein champ, \u00e0 la main, dans un petit trou fait avec une pointe en bois (2\u00e8me d\u00e9cade de mai - 1\u00e8re d\u00e9cade de juin).<br>La r\u00e9colte s'effectue en plusieurs \u00e9tapes \u00e0 partir des dix premiers jours du mois d'ao\u00fbt, lorsque les baies atteignent la bonne maturit\u00e9.<br>Une fois r\u00e9colt\u00e9s, les poivrons sont stock\u00e9s \u00e0 l'abri de la lumi\u00e8re pendant au moins deux ou trois jours et sont ensuite enfil\u00e9s manuellement sur une corde par le p\u00e9doncule, \u00e0 l'aide d'une grande aiguille, pour former ce que l'on appelle des \"serta\", des colliers de 1,50 \u00e0 2 m\u00e8tres de long.
