Serte di peperoni di Senise IGP, the traditional Lucanian 'necklaces' of dried peppers

The traditional Lucanian 'necklace' of dried peppers still decorates the alleys and hamlets of the old town centre of Senise, home of Lucanian red gold.

Dried Senise IGP peppers in pouches

A handy packet of PGI Senise peppers, dried in the traditional 'serte' and ready to be cooked and used in the kitchen, in traditional Lucanian recipes or those of your own imagination.

Only after they are fried do the peppers become crispy, hence the name 'cruschi': an irresistible texture that makes them unique!

The serte allow the pepper to dry, which loses a lot of water through this process (a 10kg necklace weighs 1kg after drying).

The product is fried in extra virgin olive oil and salted to enrich and decorate your dishes or to be enjoyed as a snack.

Peperoni cruschi in glass, fried in EVO oil and ready to eat

The crusco pepper, 'Zafaran crusk' in Lucanian dialect, is a symbol of Lucanian gastronomic tradition.

IGP Senise peppers are fried in extra virgin olive oil and ready to be enjoyed.
Perfect as an aperitif or snack and even more sublime to accompany risottos, soups, pasta dishes and main courses, both meat and fish.

Senise pepper powder PGI, a very fine-grained spice obtained by stone grinding dried peppers

The very fine-grained spice is obtained by stone grinding dried peppers, after treatment in an oven to remove residual moisture.
A condiment good for all seasons and creations on the table.
Try it also in the preparation of crusco pepper ice cream!
